Let’s talk about the Gideon’s Bakehouse nitro cold brew

If you’ve followed along, you know that this blog and its associated Instagram page is more or less a Gideon’s Bakehouse fan account.

Steve Lewis, the owner and “Sublime Prince of the Esotreic Order of Cookie,” created what is arguably the world’s most perfect cookie. So it’s only appropriate that he would also concoct an unforgettable cold brew coffee.

Though the original Gideon’s location is tucked away inside of the East End Market, the nitro cold brew options are exclusive to the flagship Disney Springs location. And while locals have long-supported the cookie concept, its chocolate-chip-stuffed goodness is now sought out by those visiting The Walt Disney World Resort.

Will there be a line? Yes. Should you wait anyways? Absolutely. Here’s why:

GIDEON’S COLD BREW IS A COOKIE IN A CUP

The nitro cold brew flavors deliver the rich flavor of Lineage Coffee beans wrapped into the decadent goodness of dessert flavors.

“With Gideon’s Cold Brew flavors, my goal was to find balance,” Lewis said in an Instagram post. “I spent a few years testing out things like the Peanut Butter Cold Brew hunting for that intersection where coffee lovers and non-coffee people meet. I’m happy with where we landed, and from the overwhelming feedback you have offered, it seems you appreciate the work we put out there. No one can ever claim to be the best, but we promise to always provide you with our best. Quality ingredients are continually a priority, and we are working on a couple more flavors to add to our little family of Cold Brews.”

At this time, three nitro cold brew coffee flavors are available, ringing in at $6 for a 16 oz cup of perfection:

The Original Peanut Butter Cold Brew: Prepared with a house-made blend of real peanuts, salt, and cold brew, this pairs well with anything chocolate.

Gideon’s White Cold Brew: Paired perfectly with either cookies or cake slices, this classic cold brew is vegan and gluten-free.

Gingersnap Cold Brew: This full-bodied coffee is mixed to order and prepared with a combination of ginger and cookie butter. According to Lewis, this pairs perfectly with the Coffee Cake Cookie, which is available in the mornings at the Disney Springs location or as the limited edition cookie at the East End Market location in August. Tip: Get to Disney Springs early. Gideon’s opens at 10 a.m., but the line will start well before that.
